I am planing on starting the AFF program this week or maybe next and had a few quick questions about the AFF program.
First does the AFF course paid up front only include the first 7 jumps? Also its my understanding that after you complete the the first 7 categories you are allowed to jump by youreslf. Is this correct? And if so I'm guessing that an instructor must sign off on every jump afterwards (jumps 7-25) in order to be certified?
I have jumped twice tandem at OC skydiving and am really interested in getting certified.

Yes the AFF cource paid up front includes the first seven jumps. After that you can jump by yourself. After AFF you don't need to get an instructor to sign off on every jump but you do need a licensed skydiver who witnessed the jump to sign your log book. That's not hard to do. You need 25 jumps to get your A license. Once you get that you get go to pretty much any dropzone in the world and jump. There are some other requirements to get you A license that the instructors here will be happy to help you with.
